Pan-seared pork belly 

This is, allegedly, the seven-layered pork belly from Jeju-do black pig. That's what it said on the package, and the price certainly reflects it. In truth, great meat! Didn't want to drown it in any heavy seasoning or spicy marinade, just pan-fried as is. Excellent meat flavor, with no trace of funky smell. 

The frying pan has a slightly protruding center, place the meat there and let rendered fat flow to the side to flavor mushrooms and vegetables.

Dipping sauce is a simple salt and sesame oil mixture to accentuate, not overpower, the meat flavor. Wrap in lettuce and dig in!
